THE HISTORICAL COPPO CELLARS HAVE BEEN DECLARED A UNESCO WORLD HERITAGE SITE: A PRESTIGIOUS ACKNOWLEDGEMENT THAT MAKES THE UNDERGROUND CATHEDRALS A TEMPLE DEDICATED TO WINE, ITS HISTORY AND MAN’S HARD WORK.

Having been built probably from the 18th century onwards, as small storage cellars, and then renovated and extended during the 1800s and 1900s, right through to their modern renovations, the wine cellars run beneath the Canelli hillside, extending for over five thousand square metres and reaching a maximum depth of forty metres.

Renamed “Underground Cathedrals” on account of their spectacular beauty, uniqueness and historical significance, they are made up of tunnels, passages, long corridors and wide vaulted ceilings enhanced by a skilful combination of light and shade that emphasises the monumental excavation work and highlights, in some places, the Canelli tufa that emerges, revealing the heart of the hill.

In addition to the beauty of the layout, the calcareous tufa of Canelli is a valuable ally: hard to break and incredibly stable, this rock acts offers perfect thermal insulation, maintaining constant humidity and a temperature between 12 and 14 degrees, the ideal conditions for ageing great wines.

This is why several kilometres of tunnels were dug under the city of Canelli as of the second half of the 19th century. This underground space thus became a veritable “oenological monument”, proving how architecture is capable of adapting wine locations to the transformations and needs of the production cycle.

The galleries were used not only for storing and ageing wines, but for the entire winemaking process, the vestiges of which (presses, filtering systems, vats, barrels, machinery) can still be seen today, serving as a tangible reminder of days gone by.

UNIQUE IN THEIR KIND, COPPO’S UNDERGROUND CATHEDRALS ARE STILL THE BEATING HEART OF THE WINERY, A PLACE WHERE ITS FINE WINES AND CLASSIC METHOD SPARKLING WINES REST WHILE WAITING TO BE TASTED OR TO BE SERVED AT THE TABLES OF WINE LOVERS.

Much more than a simple museum, they are masterpieces of engineering and oenological architecture in which history, dedication and human genius come together to preserve a tradition that has succeeded in innovating over time while proudly maintaining its roots.

Thanks to the extensive renovation and expansion work begun in 2022, the cellars can now finally be visited in their entirety in complete safety, offering glimpses of the various geological stratifications that have succeeded one another over the millennia in order to better appreciate the complexity of the subsoil and the peculiarities of the various micro-zones.
